Ahhh, leftovers. You or either love them…or hate them. I happen to love leftovers! Sometimes I like them ‘as is’ or only slightly doctored up. Pizza is great (IMOHO) cold, straight out of the fridge with a few shakes of hot sauce. Why? Cause that’s how I ate it in college, and it still makes me smile today. Meatloaf (if prepared the right way) is STUPID good, served in a sandwich made with good ole’ fashioned white bread and slathered in my homemade ‘secret sauce’. Some foods however, just don’t do it for me the next day, so I love finding recipes that help me to reinvent them into new meals.
Thanksgiving is one of those times that we end up with a ton of leftovers…turkey, cranberry sauce, mashed potatoes, veggies from the crudités platter…the list goes on and on and lets face it, there are just so many times you can eat a turkey, stuffing and cranberry sandwich (made extra special in a Panini press with some sharp provolone…but I digress…)
So let’s break tradition a little – give that turkey sandwich a break and try some of these recipes with some of your leftovers. Who knows, one of these recipes might start a new post Thanksgiving Day tradition in your home.

Yay! It’s sooo easy! I added a little garlic powder and onion powder to mine (about 1/2 tsp each) and it was so tasty :o) enjoy!
