Are you in a panic about Easter Sunday brunch? Are your relatives going to barge in your house the second that the marathon church service is over? What will you feed them? They are going to be starving. Since you want to go to church too and not be slaving over the stove here are a few ideas of what you can make in advance. You will look like a hero and don’t have to turn to that plain old Honey Baked Ham.
I am a huge fan of make-ahead meals. The last thing you want to do is run around the kitchen like Lucile Ball in a frenzy when you have guests banging their silver ware on the table like prison inmates waiting for their bologna and bread.
If you have a crowd to feed for brunch I love a casserole. They are better when they “marry” in the fridge overnight before baking. Bake them early in the morning when you wake up and just warm for a bit in a 300-degree oven until you are ready to serve.
For brunch I like to serve both a savory and sweet bread pudding or French toast. You cover all the bases. I am never sure if people want breakfast or lunch anyway.

Make this pork loin the day before slice and serve it on tiny dinner rolls with the mustard of your choice. Rosemary and Garlic Roasted Pork Loin I like to use a spicy honey mustard and those tiny Hawaiian rolls. Amazing!
If you want to serve a veggie on the side, roast or steam some fresh spring asparagus and top with a lemon vinaigrette.
Of course you should top this off with a carrot cake. It’s Easter after all. This is my favorite. I would like to take a bath in this cream cheese icing. The addition of pineapple makes this plate lick worthy.
