These quinoa and black bean bowls are almost too easy. This is one of my favorite “recipe that’s not really a recipe” recipes – the best kind of recipe, of course. You only need four ingredients and 15 minutes to make these easy quinoa and black bean bowls. Eat these as is or top with your favorite protein. We have been on a salmon kick lately so we topped ours with salmon.
These quinoa and black bean bowls also refrigerate well. You will probably have extras and the quinoa and black beans taste just as good cold as they do warm. I really love anything that works well for dinner and lunch the next day.
Quinoa and Black Bean Bowls
Ingredients:
1 cup quinoa
2 cups water or chicken broth (I used broth)
Salt to taste
1 can of black beans (rinsed and drained)
1 lime, squeezed over the quinoa and black beans at the end
Any cooked protein to serve on top
Directions:
In a medium sized saucepan, bring 2 cups of water or chicken broth to a boil. Add quinoa and about ½ teaspoon of salt. Stir. Reduce heat to a simmer and cook for 15 minutes. Remove from heat and fluff the quinoa with a fork.
Open a can of black beans. Rinse until the water runs clear. Add to fluffed quinoa. Quinoa can be served warm or cooled.
Add salt to taste. Squeeze the juice of at least half a lime over the quinoa and black beans. Taste. Add more if necessary. I added pickled red onions and a tahini dressing to my quinoa and black bean bowl and then added salmon. So good! This is an easy meal to get creative and add fun, delicious toppings. Kids love the freedom to top their bowls with their own selections. Enjoy!
