I call these treats, “No Freaking Way Cookies”. Odd, I know. But I SWEAR, every time I drop off these treats I hear . . . “NO FREAKING WAY YOU MADE THESE”!!! Yup, every year I whip-up these minty delights and spread joy (and calories) all over my neighborhood and count how many times I hear, “no freaking way”. These cookies look like you bought them at Dean & Deluca when the ingredients actually came from Target!
So, break out your aprons Smarties and prepare to be called a culinary genius for mastering what looks like an uber complicated confection!
Ingredients:
18-ounce roll refrigerated sugar cookie dough.
14-ounce package chocolate and mint “Grasshopper Cookies”. This is Keebler’s version of Thin Mints.
1 package of candy canes
Cookie boxes and white ribbon. Found in the Holiday section of Target or Michaels.
Directions:
Preheat oven to 375 degrees F.
Slightly grease a cookie sheet. Place slices of sugar cookies (about 1/4 inch) on sheet, about 2 to 3 inches apart. Top each with a Grasshopper Cookie. Cover cookie with another slice of sugar cookie dough. Pinch the sides of the “double” cookie together so the Grasshopper is no longer showing. Bake for 15 minutes (depending on your oven this might take longer). Cookies should be golden brown. They will spread and make super yummy oversized treats!
While cookies are baking, place four Grasshopper cookies and one candy cane in a plastic baggie. With a meat tenderizer or the back of a frying pan, gently crush the cookies and cane to make a crumbled topping.
While cookies are still slightly warm (but not hot) top the cookies with the minty crumbles.
Wrap up your treats in the beautiful cookie boxes! Deliver the cookies to your neighbors and color them jealous that you are so unbelievably clever!
