Fish tacos are one of my favorite easy meals for dinner or even lunch. To change things up a bit recently, I made a charred pineapple salsa to go on top of our tacos and it was absolutely delicious! This salsa could be eaten on its own with some crispy tortilla chips. I am definitely planning on making this again.
This recipe idea is from my neighbor!! She’s the best. I love making mango salsa, but I’ve never tried to make a pineapple salsa. So easy.
Charred Pineapple Salsa
Ingredients
½ pineapple, cut into large wedges
2-3 radishes, chopped
¼ red onion, finely chopped
Handful of cilantro, chopped
Salt, to taste
Directions
I cut my pineapple into a couple of large wedges, turned the heat to medium high and added the pineapple wedges – skin side on the hot pan, for a few minutes until a tiny bit charred. Turn the wedges over and slightly char the other side.
Cut the prickly skin off the pineapple and dice the rest of it. Next time, I might cut the wedges a little bit thinner and maybe char it a little bit more.
To the pineapple, I also added two radishes, chopped, 1/4 of a red onion, finely chopped, and a handful of cilantro, chopped. I stirred everything together and added a little salt to taste. That’s it. Done. Enjoy!
