This is Part 3 in our September series with Smarty Cooking School about Speedy School Day Breakfast Ideas. This is my effort to help parents speed up their morning routine with delicious and healthy breakfast options, so they can slow down once they get out the door. Smoothie and Smoothie Pops
Yield: 2 smoothies (1 cup each) + 6 popsicle tube servings
Ingredients
3 cups frozen fruit
1 medium frozen banana, peeled and sliced
1 ½ cups unsweetened almond milk
½ cup water
½ cup Greek strawberry yogurt
Directions
Combine ingredients in blender.
Blend to desired consistency, stirring between pulses if needed.
Pour 1 cup into two glasses each. Pour the remainder into six popsicle tubes or molds, using a funnel, and freeze.
Note: I use the Magic Bullet if making only half. For this amount, a bigger blender is necessary. I like to add ½ avocado for creaminess, but you can leave that out or serve on the side. The brand of frozen fruit we like is Wyman’s “Cherry, Berry, & Kale” blend. It can be found in most grocery freezer aisles. To peel the frozen banana, soak in a cup of water while preparing other ingredients. It’ll slide right off. You can even rinse off some of the yucky brown stringiness that remains, or throw it in too!
