Waffle or Pancake Tacos Directions
Defrost and lightly toast some leftover weekend waffles or pancakes or a store bought whole grain variety you enjoy. Then, slather on some nut butter, along with sliced up ‘nana or berries. Top with a 2nd waffle or pancake. Slice into two triangles, one for each child or both for a hungry kiddo. Pair with a glass of milk or some yogurt. This also works equally well on a nice piece of whole grain toast.
Recipe for DIY Waffle and Pancake Mix
Yield: 10 ½ cups mix
Ingredients
5 cups all purpose flour
4 cups whole wheat flour
4 tablespoons sugar
4 tablespoons baking powder
2 teaspoons baking soda
2 teaspoons salt
Directions
Combine ingredients. Store in pantry.
To make waffles: In mixing bowl, combine 3 cups of mix with 2 ¾ cups milk, ¼ cup canola oil, and 2 eggs. Cook waffles in waffle maker. Yield: approximately 12-14 waffles
To make pancakes: In mixing bowl, combine 2 cups of mix with 1 ¾ cups milk, and 1 egg. Spray pan with canola oil and cook in batches. Yield: approximately 8-10 pancakes
Note: These freeze well. Thaw on defrost in microwave in 30 second bursts. Toast on low setting if desired to crisp back up.
