We made the easiest dinner yesterday!! Turkey sliders over a delicious carrot and zucchini salad with tahini dressing. I confess that I am totally obsessed with using tahini right now! Our current favorite chocolate chip cookie uses tahini. Tahini has such a lovely, nutty flavor that it adds a lot of dimension to sweet or savory foods. Tahini is simply just a paste made from sesame seeds. You can find it at any grocery store – often in the international food aisle. It is considered a Mediterranean staple.
Start with The Zucchini and Carrot Salad
Start with the salad. I have a vegetable peeler that peels these skinny strips. I got this peeler from Williams Sonoma a few years ago, but the brand is Messermeister– they make great peelers! It’s so cool and makes putting these salads together so easy. I used two larger white and yellow carrots and two zucchinis. Cut the ends off and then peel. That’s it! I also added a handful of chopped cilantro before adding the dressing.
For the tahini dressing, I combined 2 T tahini, 1/4 lemon squeezed, grated ginger, crushed garlic, salt and pepper, and 2 T olive oil. Everything was approximate. Taste it! Whisk together. Pour over the entire salad and toss well.
Turkey Sliders – A Recipe That’s Not Even A Recipe
For the turkey sliders, all you need is ground turkey, cilantro, salt and pepper. Combine all of these ingredients and then put in the freezer for a few minutes to make it easier to form patties. One pound of ground turkey made about 8 sliders.
Cook sliders in a little olive oil until cooked through and then flip. Don’t crowd the pan. I like to crush a little salt and pepper over the sliders while they are cooking. Done. Serve sliders over salad. That’s it! So easy. So delicious.
