Have y’all made the internet famous Feta Pasta? Go for it. It lives up to the hype! I swear. We love to make pasta so we were totally down to try this new recipe.
I stopped by the Fresh Market near our house in Charlotte and could only find one block of feta cheese. I asked the man behind the counter and he said, “Ma’am, it’s hard to keep the feta cheese in stock. Apparently there is some viral TikTok that uses feta cheese.” You don’t say…🤣🤣
I left with my singular block of feta cheese to feed 7 people and hoped for the best.
Noelle, my middle schooler, made this dinner for us and she totally nailed it.
We started with one pint of cherry tomatoes and a few extra tomatoes chopped up in the bottom of our casserole dish. We drizzled olive oil over the tomatoes and added a few chopped cloves of garlic and some freshly ground salt.
Nestle the block of feta in the middle of all the tomatoes. Cook at 400 for 30 minutes.
While the feta and tomatoes cook, prepare your pasta. We made regular and gluten free penne. Don’t forget to generously salt your water.
When the feta and tomatoes are done baking, take a wooden spoon and break up the feta and mix a little with the tomatoes. We added the drained pasta and some fresh basil. That’s it!
We served our feta pasta with some garlic toast. To make our garlic toast, we sliced some gluten free bread and drizzled each slice with butter and crushed garlic and then baked at 400 for about ten minutes.
