Did you set any New Year’s resolutions to eat healthier this year? Maybe eat out less? These easy overnight oats will be a healthy addition to your day and they might even substitute for takeout lunch or breakfast. One of my favorite parts about these overnight oats is that they are very transportable. I make them in mason jars and stick them in my purse as I head out the door to work. No lie.
I waited way too long to get on board the overnight train, but now I am totally committed. Delicious. Not mushy. Not trendy. Just delicious. And good for you. And easy.
I have a cabinet full of mason jars and repurposed jam jars that are absolutely perfect for this breakfast project. I like to use a half-pint size – a half-pint size seems just right for a breakfast serving but, if you tend toward the hungrier side in the morning, size up!
When you add milk, pour until the oats are submerged.
Top with anything! I like unsweetened coconut flakes, Medjool dates, and pecans.
You can add fruit, yogurt, peanut butter or another nut butter, chocolate chips, chia seeds, protein powder, anything!
Another great thing about overnight oats is that you can prep a few ahead of time! You don’t even have to eat them the very next day – if my kids don’t eat the ones I make for them, I gladly gobble them up later in the week.
So … get on it. Make yourself or your kids some of these overnight oats. Send them to school. Bring them to work. Enjoy them with your coffee.
Easy Overnight Oats Recipe
Ingredients:
1 small mason jar
½ c old fashioned oats
¼ c to ⅓ c milk (almond, oat, soy, cow)
1 teaspoon honey
1 tablespoon unsweetened coconut flakes
1 medjool date, chopped
1 tablespoon pecans, chopped
Fresh fruit to top
Instructions:
In a mason jar, add the oats and then honey. Pour in milk until oats are covered. Top with dates, nuts, and coconut. Cover. Put in the fridge overnight. In the morning, top with fresh fruit. Enjoy!
