This is Part 2 in our September series with Smarty Cooking School about Speedy School Day Breakfast Ideas. This is my effort to help parents speed up their morning routine, with delicious and healthy options, so they can slow down once they get out the door. One rushing driver cost the family of Charlotte City Council Tariq Bohkari a harrowing accident on the morning of their son’s first day of kindergarten. Thankfully they escaped without serious injuries. Read about that, the reasoning behind the series, and the first two School Day Breakfast ideas.
Meanwhile, for this week’s Breakfast Idea No. 3, check out waffle tacos!
Waffle or Pancake Tacos Directions
Defrost and lightly toast some leftover weekend waffles or pancakes or a store bought whole grain variety you enjoy. Then, slather on some nut butter, along with sliced up ‘nana or berries. Top with a 2nd waffle or pancake. Slice into two triangles, one for each child or both for a hungry kiddo. Pair with a glass of milk or some yogurt. This also works equally well on a nice piece of whole grain toast.
